Before starting, we advise you to sift the flour at least twice, this will avoid the formation of lumps during preparation.
in a small saucepan, heat the milk over a very low heat, making sure it does not boil.
In another pot, put the butter to melt over low heat.
When the butter is completely melted, add all the flour.
we begin to mix everything continuously so as not to burn the mixture.
When everything has taken on a nutty color then we begin to add the hot milk a little at a time and without ever ceasing to mix.
Continue until all the milk is poured.
when all the milk has poured in, add the Parmesan, the nutmeg and season with salt and pepper.
Remove from the heat once the béchamel has reached the desired consistency.
