Ingredients

For pasta


  • 100g flour

  • 1 whole egg


For the meatballs


  • 200g of minced meat

  • 1 minced garlic clove

  • 50g parmesan

  • salt

  • pepper

  • Chopped parsley

  • 50g bread

  • 1 whole egg


  • tomato sauce

  • 1 clove of garlic

  • paprika

  • salt and pepper

Pasta


We prepare the pasta by combining eggs and flour.

Knead vigorously and when a smooth and uniform dough has formed, let it rest in the fridge.


Meatballs


In a container we mix all the ingredients and salt and pepper to our liking.

after making sure you have mixed everything well

let's start forming meatballs of 50g each.

In a pan, heat some oil with a clove of garlic, as soon as there is enough oil

hot, gently arrange the meatballs and pay attention to a few splashes of hot oil.

let's brown the meatballs taking care to turn them on itself making them brown all around.

Remove the garlic and add the tomato sauce and a spoonful of paprika.

Let it cook for at least 10 minutes to let it reduce a bit.

We add salt and pepper to our liking.

When the sauce is ready, turn off the heat and let it rest.


In the meantime, boil some water with a handful of salt in a saucepan.


Waiting for the water to boil, roll out the pasta dough and cut it into thin strips.

This operation can also be done using a pasta machine.

We keep the pasta ready to be cooked.


When the water boils, immerse the pasta and start cooking which tends to last about 3 minutes as it is fresh pasta.

When the pasta is cooked, drain it from the cooking water and put it in the pan with the sauce and meatballs.

Turn the flame back on and start whisking.

When everything is ready, serve on a plate and garnish with grated Parmesan and basil if you like.


You can obviously buy the pasta you want at the supermarket, the procedure doesn't change.

just remember to follow the manufacturer's cooking times.
